Robert Thompson is an incendiary talent. His style of cooking is light, never overtly rich or pretentious, and yet he is a master when it comes to creating intense flavours that surprise and delight and linger on the palate.
Book a table quickly at The Hambrough and savour everything! The first glass of pale pink Bellicart Salmon champagne served in the pretty dining room; the sweet, aromatic walnut bread - the best on the island; and on to Thompson’s polished, confident unfolding love affair with island ingredients.
To start, perhaps his signature dish, a sweet, intoxicating, terrine of smoked eel, fois gras, roast pork and caramelised granny smiths; or a salad of local lobster with three types of asparagus, transformed by smoky, sustainable caviar. To follow, Dunsbury Nicoise - every part of this exquisite island lamb cooked to perfection and wittily presented as a Nicoise with a twist. Then to the finale, perhaps a perfumed, aromatic blackberry soufflé with ice cream made with Ventnor stout; or a beautifully executed palette of sorbets complete with the most delicious, edible paint brush imaginable.
